Featured Recipe: Focaccia Sandwich with Spinach, Brie and Chicken

 

     

Recipe Serves Three to Six

Ingredients:

Focaccia Italian Flat Bread 1 focaccia or 3 6-inch Italian rolls
Chicken Breast 12 oz grilled and shredded
Tomatoes - fresh 2 Cups diced
Spinach - fresh 2 Cups washed and trimmed
Brie cheese wheel 6 ounces, sliced

Instruction Steps:

  1. Preheat oven to 250 degrees F.
  2. Slice focaccia in half lengthwise
  3. Grill chicken breast until cooked thoroughly, shred or slice thinly.
  4. Place spinach on bottom half of focaccia, then a layer each of tomato, chicken and brie.
  5. Top with other half of focaccia and place in oven for 15 minutes until cheese melts.
