Dining Service uses two computer based systems to support daily operations.
CBORD:
Kendal at Longwood was chosen as a beta site for the development of a Windows operating system for the food service industry working with The CBORD Group, Inc., a company located in Ithaca, New York. The software program was rolled out to all Kendal affiliates and today, chefs from each of the Kendal communities have shared thousands of recipes that have proved to be popular with residents. These recipes have been coded into a master database and nutritionally analyzed. Using feedback from dining programs throughout the Kendal system, master five week menu cycles are created twice a year in the corporate database. Care is taken to create menus which reflect the nutrition goals of reduced saturated and trans-fats and lowered sodium while rich in fruits, vegetables and whole grains. Because communities have regional and “house “resident preferences, each affiliate copies the master cycle and makes it their own.
Food production is supported electronically by scaled recipes, production sheets, temperature logs, inventory and cost reports. The Nutrition Service Suite of CBORD maintains paperless records for each health center resident, tracking weights, and providing reports which support the clinical programs. Residents are often interested in the nutrition analysis of the recipes; a CBORD report is printed for individuals' review and included on the daily menus.
COMCASH:
Some Kendal affiliates use a Point of Sale system, called Comcash, to record transactions for meals and grocery purchases. Each resident has a name tag and key fobs with their unique identifier and these are scanned at the cash register. Residents are encouraged to bring guests. All meals are reconciled with the meal plan and charges are sent electronically to billing. Kendal staff members are able to use their ID cards to purchase meals and groceries. Automating these procedures has reduced repetitious tasks, saved time and improved accuracy.
